  • 2/3 cup boiling water
  • ½ cup Greek yogurt, cold
  • 1 ½ cup fresh blueberries
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ¾ cups whipped cream (Cool Whip or homemade)
  • 6 oz strawberry gelatin
  • 1 ¼ cup boiling water + ¾ cup iced water
  • 4 cups sliced strawberries
  • 2 cups whipped cream (Cool Whip or homemade)
  • Red, white, and blue sprinkles or star confetti

Instructions

  1. Make the Oreo Crust: Pulse Oreo cookies in a food processor until fine crumbs form. Stir in sprinkles. Add melted butter and mix until evenly moistened. Press the mixture into the bottom of a 9 x 13-inch dish and freeze to firm while preparing the next layer.
  2. Blueberry Cheesecake Layer: Dissolve the berry blue gelatin in 2/3 cup boiling water. Set aside to cool. Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in 1 ¾ cups whipped cream. Pulse Greek yogurt and blueberries in a food processor. Stir into the cooled gelatin. Combine with cream cheese mixture and spread over the chilled crust. Refrigerate or freeze to set.
  3. Strawberry Jello Layer: Dissolve strawberry gelatin in boiling water, then stir in iced water. Let cool to room temperature. Arrange sliced strawberries over the blueberry cheesecake layer. Pour cooled strawberry gelatin over the strawberries. Refrigerate until firm, at least 4–6 hours or overnight.
  4. Topping: Spread whipped cream over the top and garnish with sprinkles or fresh fruits.
