A hearty and flavorful beef stew that warms the soul, perfect for cold days.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 medium carrots, sliced
- 2 medium potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides.
- Remove the beef and set aside. In the same pot, add onions and garlic, sauté until translucent.
- Stir in tomato paste, thyme, rosemary, and cook for another minute.
- Add the beef back to the pot along with the beef broth, carrots, potatoes, and bay leaves.
- Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours until the beef is tender.
- Season with salt and pepper to taste before serving.
Notes
- For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
- Feel free to add other vegetables like peas or green beans.
- This stew can be made a day ahead and tastes even better the next day.
