The Best Soft Chocolate Chip Cookies


Ingredients

  • 8 tablespoons salted butter (½ cup / 1 stick)
  • ½ cup white sugar (raw cane sugar works great)
  • ¼ cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1½ cups all-purpose flour (6.75 oz)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt (plus a little extra if you like)
  • ¾ cup chocolate chips (or a mix of chips + chunks)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Microwave the butter for about 40 seconds until it’s almost melted. It should be mostly liquid but not hot.
  3. Using a stand mixer or hand mixer, beat the melted butter with both sugars until creamy. Add vanilla and egg. Mix on low just until combined (about 10–15 seconds).
  4. Add flour, baking soda, and salt. Mix until crumbly. Use your hands to press the crumbles together into one dough ball.
  5. Add chocolate chips/chunks and knead in gently with your hands.
  6. Roll dough into 12 large balls (or 9 extra-large cookies). Place on a baking sheet.
  7. Bake 9–11 minutes, until cookies look puffy, dry on top, and just barely golden.
  8. Let cookies cool on the pan for about 30 minutes. They will sink and become dense, buttery, and super soft.

Notes

  • Do not overbake — pull them out even if they look slightly underdone.
  • Store in an airtight container to keep them soft for days, or freeze.
