The Best Soft Chocolate Chip Cookies

- 8 tablespoons salted butter (½ cup / 1 stick)
- ½ cup white sugar (raw cane sugar works great)
- ¼ cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1½ cups all-purpose flour (6.75 oz)
- ½ teaspoon baking soda
- ¼ teaspoon salt (plus a little extra if you like)
- ¾ cup chocolate chips (or a mix of chips + chunks)
Instructions
- Preheat oven to 350°F (175°C).
- Microwave the butter for about 40 seconds until it’s almost melted. It should be mostly liquid but not hot.
- Using a stand mixer or hand mixer, beat the melted butter with both sugars until creamy. Add vanilla and egg. Mix on low just until combined (about 10–15 seconds).
- Add flour, baking soda, and salt. Mix until crumbly. Use your hands to press the crumbles together into one dough ball.
- Add chocolate chips/chunks and knead in gently with your hands.
- Roll dough into 12 large balls (or 9 extra-large cookies). Place on a baking sheet.
- Bake 9–11 minutes, until cookies look puffy, dry on top, and just barely golden.
- Let cookies cool on the pan for about 30 minutes. They will sink and become dense, buttery, and super soft.
Notes
- Do not overbake — pull them out even if they look slightly underdone.
- Store in an airtight container to keep them soft for days, or freeze.
