Ingredients

  • 1 ¼ cups + 2 tablespoons sugar, separated
  • 1 cup self-rising flour
  • 1 cup milk, any kind
  • ½ stick butter, melted (4 tbsp)
  • 2 cups fresh or frozen blackberries, rinsed and patted dry
  • Vanilla ice cream, for serving

Instructions

  1. Preheat oven to 350°F. Grease a 9×9-inch baking dish.
  2. In a large bowl, combine 1 cup sugar with the flour. Stir in the milk and melted butter until smooth. Pour into the prepared baking dish.
  3. Evenly distribute blackberries on top. They’ll sink slightly as they bake.
  4. Sprinkle ¼ cup sugar over the berries, reserving 2 tablespoons for later.
  5. Bake for 50 minutes. Remove from oven and sprinkle the remaining 2 tablespoons of sugar on top.
  6. Bake an additional 10 minutes, until the top is golden brown.
  7. Serve warm with vanilla ice cream.

Notes

  • Frozen Berries: Add them frozen to prevent a mushy consistency.
  • Homemade Self-Rising Flour: 1 cup flour + ½ tsp salt + 1 ½ tsp baking powder.
  • Other Fruits: Blueberries, raspberries, strawberries, peaches, or a mix work well.
  • Optional: Reserve some berries and add them 30 minutes into baking to keep them near the top.
