Description
A delicious and easy blackberry cobbler recipe from The Pioneer Woman.
Ingredients
Scale
- 1 ¼ cups + 2 tablespoons sugar, separated
- 1 cup self-rising flour
- 1 cup milk, any kind
- ½ stick butter, melted (4 tbsp)
- 2 cups fresh or frozen blackberries, rinsed and patted dry
- Vanilla ice cream, for serving
Instructions
- Preheat oven to 350°F. Grease a 9×9-inch baking dish.
- In a large bowl, combine 1 cup sugar with the flour. Stir in the milk and melted butter until smooth. Pour into the prepared baking dish.
- Evenly distribute blackberries on top. They’ll sink slightly as they bake.
- Sprinkle ¼ cup sugar over the berries, reserving 2 tablespoons for later.
- Bake for 50 minutes. Remove from oven and sprinkle the remaining 2 tablespoons of sugar on top.
- Bake an additional 10 minutes, until the top is golden brown.
- Serve warm with vanilla ice cream.
Notes
- Frozen Berries: Add them frozen to prevent a mushy consistency.
- Homemade Self-Rising Flour: 1 cup flour + ½ tsp salt + 1 ½ tsp baking powder.
- Other Fruits: Blueberries, raspberries, strawberries, peaches, or a mix work well.
- Optional: Reserve some berries and add them 30 minutes into baking to keep them near the top.
