Description

Delicious white chocolate truffles with a hint of blueberry.

Ingredients

Scale
  • 9 oz white chocolate, chopped very small
  • 5 tbsp unsalted butter, softened
  • 3 tbsp heavy cream
  • 1.2 oz freeze-dried blueberries, powdered
  • ¼ cup powdered sugar

Instructions

  1. In a small saucepan, simmer the heavy cream. Remove from heat, add softened butter, and stir until fully melted and combined. Stir in the powdered blueberries until smooth. Set aside.
  2. Using a double boiler, melt the chopped white chocolate, stirring gently until smooth. Do not heat above 105°F.
  3. Gently stir the lukewarm blueberry mixture into the melted chocolate.
  4. Let the mixture cool to room temperature, then cover with plastic wrap and refrigerate for 2–3 hours or overnight until firm enough to roll.
  5. Scoop the mixture and roll into 1-inch balls. Dust hands with powdered sugar if the mixture sticks.
  6. Roll each truffle in powdered sugar to coat. Store in an airtight container in the fridge for up to 1 week, or freeze for longer storage.

Notes

  • Stir the mixture every 30–60 minutes while cooling to prevent fat separation.
