Description
Delicious white chocolate truffles with a hint of blueberry.
Ingredients
Scale
- 9 oz white chocolate, chopped very small
- 5 tbsp unsalted butter, softened
- 3 tbsp heavy cream
- 1.2 oz freeze-dried blueberries, powdered
- ¼ cup powdered sugar
Instructions
- In a small saucepan, simmer the heavy cream. Remove from heat, add softened butter, and stir until fully melted and combined. Stir in the powdered blueberries until smooth. Set aside.
- Using a double boiler, melt the chopped white chocolate, stirring gently until smooth. Do not heat above 105°F.
- Gently stir the lukewarm blueberry mixture into the melted chocolate.
- Let the mixture cool to room temperature, then cover with plastic wrap and refrigerate for 2–3 hours or overnight until firm enough to roll.
- Scoop the mixture and roll into 1-inch balls. Dust hands with powdered sugar if the mixture sticks.
- Roll each truffle in powdered sugar to coat. Store in an airtight container in the fridge for up to 1 week, or freeze for longer storage.
Notes
- Stir the mixture every 30–60 minutes while cooling to prevent fat separation.
