Description

A delicious 4-inch Mini Burnt Basque Cheesecake perfect for one or two servings.


Ingredients

  • 4 oz cream cheese, room temperature
  • 3 tbsp heavy whipping cream, room temperature
  • 1 tbsp sour cream, room temperature
  • 1 egg
  • 1/4 tsp vanilla
  • 2 tbsp sugar
  • 1 1/2 tsp flour

Instructions

  1. Place the oven rack at the top position. Preheat oven to 500°F for at least 15 minutes.
  2. Line a 4-inch cheesecake pan with parchment paper.
  3. In a bowl, mix the cream cheese, heavy cream, and sour cream until smooth.
  4. Add the egg, vanilla, and sugar. Whisk until combined.
  5. Add the flour and mix until smooth.
  6. Pour the batter into the lined pan and place it on the top rack, toward the back of the oven.
  7. Reduce heat to 450°F and bake for 20 minutes, allowing the top to deeply brown.
  8. Let the cheesecake cool in the pan for 20 minutes, then remove and cool on a rack.
  9. Serve at room temperature or chill in the fridge for a firmer texture.

Notes

  • Proper parchment lining helps achieve the signature rustic shape.
  • Baking at very high heat creates the classic caramelized top and creamy center.
