Description
A delicious 4-inch Mini Burnt Basque Cheesecake perfect for one or two servings.
Ingredients

- 4 oz cream cheese, room temperature
- 3 tbsp heavy whipping cream, room temperature
- 1 tbsp sour cream, room temperature
- 1 egg
- 1/4 tsp vanilla
- 2 tbsp sugar
- 1 1/2 tsp flour
Instructions
- Place the oven rack at the top position. Preheat oven to 500°F for at least 15 minutes.
- Line a 4-inch cheesecake pan with parchment paper.
- In a bowl, mix the cream cheese, heavy cream, and sour cream until smooth.
- Add the egg, vanilla, and sugar. Whisk until combined.
- Add the flour and mix until smooth.
- Pour the batter into the lined pan and place it on the top rack, toward the back of the oven.
- Reduce heat to 450°F and bake for 20 minutes, allowing the top to deeply brown.
- Let the cheesecake cool in the pan for 20 minutes, then remove and cool on a rack.
- Serve at room temperature or chill in the fridge for a firmer texture.
Notes
- Proper parchment lining helps achieve the signature rustic shape.
- Baking at very high heat creates the classic caramelized top and creamy center.
- Chill for a more set texture if preferred.
