Delicious almond croissant blondies with a frangipane layer and almond topping.

- 1/2 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1 large egg, room temperature
- 1/4 tsp almond extract
- 2 tsp vanilla extract
- 1/4 tsp salt
- 1 1/3 cups all-purpose flour
- 1/4 tsp baking powder
- 1/3 cup almond flour
- 1/2 cup sliced almonds (for topping)
- Powdered sugar (for dusting)
- 4 tbsp butter (for frangipane)
- 1/4 cup granulated sugar (for frangipane)
- 1 egg yolk (for frangipane)
- 1/4 tsp vanilla extract (for frangipane)
- 1/4 tsp almond extract (for frangipane)
- 1/4 tsp orange zest (optional, for frangipane)
- 2/3 cup almond flour (for frangipane)
- Pinch of salt (for frangipane)
Instructions
- Preheat oven to 350°F. Line an 8×8 inch baking pan with parchment paper.
- Make the frangipane: Cream the butter and granulated sugar together. Mix in the egg yolk, orange zest, vanilla extract, and almond extract. Fold in the almond flour and salt until a paste forms. Set aside.
- Make the blondie batter: In a large bowl, mix the softened butter and brown sugar until combined. Add the egg, almond extract, and vanilla extract and mix until smooth.
- Add the flour, baking powder, salt, and almond flour. Stir until just combined; do not overmix.
- Spread the batter evenly into the prepared pan. Spoon the frangipane over the top and swirl gently using a skewer or knife.
- Sprinkle the sliced almonds evenly on top.
- Bake for about 30 minutes, until the edges are set and the center is slightly firm.
- Allow to cool completely in the pan before dusting with powdered sugar and slicing.
Notes
- Orange zest is optional but enhances the almond flavor.
- Let the blondies cool fully before cutting for clean slices.
- Store in an airtight container at room temperature for up to 3 days.
