Description

Delicious almond croissant blondies with a frangipane layer and almond topping.


Ingredients

  • 1 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1/4 tsp almond extract
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/3 cups all-purpose flour
  • 1/4 tsp baking powder
  • 1/3 cup almond flour
  • 1/2 cup sliced almonds (for topping)
  • Powdered sugar (for dusting)
  • 4 tbsp butter (for frangipane)
  • 1/4 cup granulated sugar (for frangipane)
  • 1 egg yolk (for frangipane)
  • 1/4 tsp vanilla extract (for frangipane)
  • 1/4 tsp almond extract (for frangipane)
  • 1/4 tsp orange zest (optional, for frangipane)
  • 2/3 cup almond flour (for frangipane)
  • Pinch of salt (for frangipane)

Instructions

  1. Preheat oven to 350°F. Line an 8×8 inch baking pan with parchment paper.
  2. Make the frangipane: Cream the butter and granulated sugar together. Mix in the egg yolk, orange zest, vanilla extract, and almond extract. Fold in the almond flour and salt until a paste forms. Set aside.
  3. Make the blondie batter: In a large bowl, mix the softened butter and brown sugar until combined. Add the egg, almond extract, and vanilla extract and mix until smooth.
  4. Add the flour, baking powder, salt, and almond flour. Stir until just combined; do not overmix.
  5. Spread the batter evenly into the prepared pan. Spoon the frangipane over the top and swirl gently using a skewer or knife.
  6. Sprinkle the sliced almonds evenly on top.
  7. Bake for about 30 minutes, until the edges are set and the center is slightly firm.
  8. Allow to cool completely in the pan before dusting with powdered sugar and slicing.

Notes

  • Orange zest is optional but enhances the almond flavor.
  • Let the blondies cool fully before cutting for clean slices.
