Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 large eggs

  • 1 cup apples, peeled and chopped
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, baking soda, salt, and cinnamon.
  3. In another bowl, cream butter and sugar. Add eggs and vanilla, mix well.
  4. Combine wet and dry ingredients. Fold in chopped apples.
  5. Pour batter into a greased loaf pan.
  6. In a small bowl, mix brown sugar, oats, and nuts for the topping. Sprinkle over the batter.
  7. Bake for 60-70 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
