Ingredients

- 3 hard-boiled eggs, cut in half
- 1 large avocado
- 2 teaspoons lime juice
- 1 teaspoon chopped cilantro
- Pinch of garlic powder
- Salt and pepper, to taste
- Paprika, for garnish (optional)
Instructions
- Remove shells from the hard-boiled eggs.
- Slice eggs lengthwise and carefully remove the yolks.
- Place yolks in a mixing bowl.
- Add avocado to the bowl with the yolks.
- Mash with a fork until smooth.
- Add lime juice, cilantro, garlic powder, salt, and pepper.
- Stir until fully blended and creamy.
- Spoon or pipe the mixture into the egg white halves.
- Sprinkle with paprika if desired.
Notes
- Store in an airtight container in the refrigerator for up to 3 days.
- For best color and freshness, prepare the filling close to serving time, as avocado naturally browns over time.
- Lime juice helps slow oxidation.
