Delicious banana pudding cheesecake squares with a graham cracker crust.

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 3 ripe bananas, mashed
- 1 cup sour cream
- 1/4 cup all-purpose flour
- 1/4 cup milk
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the graham cracker crumbs with melted butter in a medium bowl until evenly combined.
- Press the mixture into the bottom of a 9×13-inch baking dish to form an even crust.
- In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Fold in the mashed bananas, sour cream, flour, and milk until the mixture is smooth and fully combined.
- Pour the banana cheesecake filling over the prepared graham cracker crust.
- Bake in the preheated oven for 45–50 minutes, until the center is set (it may jiggle slightly when gently shaken).
- Allow the cheesecake to cool completely before cutting into squares or rectangles.
- Serve chilled or at room temperature.
Notes
- Top with whipped cream or sliced fresh bananas for extra flavor.
- Sprinkle crushed vanilla wafers or additional graham cracker crumbs for added texture.
