Ingredients

  • 16 oz refried beans (canned or homemade)
  • 3/4 cup plain Greek yogurt or sour cream
  • 4 oz can diced mild green chiles, drained
  • 1/4 cup salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 cups shredded cheddar or Mexican blend cheese, divided

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine refried beans, Greek yogurt (or sour cream), green chiles, salsa, chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Stir in 1 cup of the shredded cheese until evenly mixed.
  4. Spread the mixture into an 8×8-inch baking dish or 2-quart casserole dish.
  5. Sprinkle the remaining 1 cup of shredded cheese evenly over the top.
  6. Bake for 20–25 minutes, or until the cheese is melted and bubbly.
  7. Remove from oven and add desired toppings.
  8. Serve warm with tortilla chips.

  • For extra heat, use hot salsa or additional jalapeños.
