- 16 oz refried beans (canned or homemade)
- 3/4 cup plain Greek yogurt or sour cream
- 4 oz can diced mild green chiles, drained
- 1/4 cup salsa
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- Salt and black pepper, to taste
- 2 cups shredded cheddar or Mexican blend cheese, divided
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine refried beans, Greek yogurt (or sour cream), green chiles, salsa, chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper.
- Stir in 1 cup of the shredded cheese until evenly mixed.
- Spread the mixture into an 8×8-inch baking dish or 2-quart casserole dish.
- Sprinkle the remaining 1 cup of shredded cheese evenly over the top.
- Bake for 20–25 minutes, or until the cheese is melted and bubbly.
- Remove from oven and add desired toppings.
- Serve warm with tortilla chips.
Notes
- For extra heat, use hot salsa or additional jalapeños.
- Can be prepared ahead and refrigerated before baking.
- Leftovers can be stored in an airtight container for up to 3 days.
