Best Ever Vegetable Beef Soup is a hearty and flavorful dish packed with vegetables and tender beef.

- Leftover short rib bones
- Water to cover
- Prepared short rib bone broth
- 1 medium onion, chopped
- 1 (28 oz) can fire-roasted crushed tomatoes
- 2 (10 oz) bags frozen cut green beans
- 4 potatoes, peeled and diced
- 1 (14 oz) can corn, drained (omit for Whole30)
- 1 (14 oz) can chopped carrots, drained
- 2 bay leaves
- 1 Tbsp Better Than Bouillon beef base
- 2½ lb chuck roast
- 1 Tbsp garlic powder
- Salt and pepper, to taste
- 1½ cups water, plus more as needed
Instructions
- Place short rib bones in a large pot or slow cooker and cover with water.
- Slow cooker: Cook on LOW for 8 hours. Stovetop: Simmer covered on LOW for about 4 hours, stirring occasionally.
- Remove and discard the bones. Strain broth if desired.
- Season chuck roast generously with salt and pepper.
- Sear in a hot skillet on all sides until browned. Set aside.
- To the broth, add onion, tomatoes, green beans, potatoes, corn (if using), carrots, bay leaves, bouillon, and garlic powder.
- Add the seared chuck roast.
- Pour in 1½ cups water (add more if needed) so the roast is fully submerged.
- Slow cooker: Cook on LOW for 8–10 hours. Stovetop: Cover and simmer on LOW for 4–5 hours.
- Stir occasionally and begin shredding the beef as it becomes tender.
- Soup is ready when the beef is fully shredded and vegetables are tender.
- Taste and adjust salt and pepper as needed. Remove bay leaves before serving.
Notes
- Freezes very well.
- Even better the next day as flavors deepen.
- For a thicker soup, mash a few potatoes into the broth before serving.
