Description
Botwinka is a traditional Polish soup made with young beets, offering a fresh and earthy flavor.
Ingredients

- 2 tbsp Clarified Butter or Cooking Oil
- 1/2 Onion Sweet, peeled, and chopped
- 1 Leek Peeled, washed, and chopped
- 2 Carrots Peeled and chopped
- 2 Celery Stalks Washed and chopped
- 4 Beets Medium size with stems and leaves washed and chopped
- 4 Potatoes Medium size, peeled and chopped
- 6 cups Broth Chicken or Vegetable
- 6 tbsp Sour Cream for serving
- Fresh Chopped Dill and Parsley for serving
- Salt and Pepper to taste (or chicken cube)
- Lemon Juice to taste
Instructions
- Clean the beets by cutting off the stems and soaking in water for a few minutes.
- Peel the beet bulbs and pat the leaves dry.
- Chop the beets, stems, and leaves.
- Peel and chop the onions, leeks, carrots, and celery.
- Heat clarified butter or cooking oil in a pot.
- Add onions and leeks, cooking until softened.
- Add celery and carrots, cooking for a few more minutes.
- Add potatoes, beets, stems, leaves, and broth. Cook for about 30 minutes until veggies are soft.
- Season with chicken bouillon, salt, and pepper. Add lemon juice to taste.
- Serve with fresh dill and a dollop of sour cream.
Notes
- For a vegan version, skip the sour cream.
