Description

Botwinka is a traditional Polish soup made with young beets, offering a fresh and earthy flavor.


Ingredients

  • 2 tbsp Clarified Butter or Cooking Oil
  • 1/2 Onion Sweet, peeled, and chopped
  • 1 Leek Peeled, washed, and chopped
  • 2 Carrots Peeled and chopped
  • 2 Celery Stalks Washed and chopped
  • 4 Beets Medium size with stems and leaves washed and chopped
  • 4 Potatoes Medium size, peeled and chopped
  • 6 cups Broth Chicken or Vegetable
  • 6 tbsp Sour Cream for serving
  • Fresh Chopped Dill and Parsley for serving
  • Salt and Pepper to taste (or chicken cube)
  • Lemon Juice to taste

Instructions

  1. Clean the beets by cutting off the stems and soaking in water for a few minutes.
  2. Peel the beet bulbs and pat the leaves dry.
  3. Chop the beets, stems, and leaves.
  4. Peel and chop the onions, leeks, carrots, and celery.
  5. Heat clarified butter or cooking oil in a pot.
  6. Add onions and leeks, cooking until softened.
  7. Add celery and carrots, cooking for a few more minutes.
  8. Add potatoes, beets, stems, leaves, and broth. Cook for about 30 minutes until veggies are soft.
  9. Season with chicken bouillon, salt, and pepper. Add lemon juice to taste.
  10. Serve with fresh dill and a dollop of sour cream.

Notes

  • For a vegan version, skip the sour cream.
