Ingredients

  • 1 cup creamy peanut butter
  • 1 stick butter, softened
  • 1 teaspoon vanilla extract
  • 2 ½ cups powdered sugar (do not pack)
  • 2 cups chocolate chips
  • 2 tablespoons coconut oil (optional)

Instructions

  1. Line a 9×9-inch square baking dish with parchment paper.
  2. In a stand mixer, beat together the peanut butter and softened butter on medium speed until fully combined.
  3. Add vanilla extract and mix on low speed.
  4. Slowly add powdered sugar, mixing on low until incorporated.
  5. Continue mixing until a thick dough ball forms. If too wet, add more powdered sugar.
  6. Press the peanut butter mixture into the lined pan evenly.
  7. In a microwave-safe bowl, combine chocolate chips and coconut oil.
  8. Microwave for 30 seconds, stir, then heat another 20–30 seconds until smooth.
  9. Pour melted chocolate over the peanut butter layer and spread evenly.
  10. Refrigerate for about 2 hours or until chocolate is fully hardened.
  11. Sprinkle with sea salt if desired.
  12. Slice into bars and serve.
