Buffalo Chicken Burgers are a flavorful twist on traditional burgers, made with ground chicken and spicy buffalo sauce.
Ingredients

- 1 lb ground chicken
- 1 egg
- ½ cup almond flour
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ cup celery, finely sliced
- 1 tablespoon buffalo sauce
- 1 tablespoon ghee, cold and cut into small chunks
- Butter lettuce or burger bun of choice
- Optional toppings: sliced green onions, extra buffalo sauce, ranch dressing, blue cheese dressing, blue cheese crumbles
Instructions
- Add all burger ingredients to a large mixing bowl.
- Mix until just combined.
- Lightly oil your hands and shape mixture into 4 patties.
- Place patties on a plate, cover, and refrigerate for 30–60 minutes.
- Preheat grill to 400–450°F and prepare grates with aluminum foil and oil spray.
- Cook patties on foil over direct heat for 5–7 minutes per side until internal temperature reaches 160–165°F.
- Let patties rest for 5–10 minutes and build burgers with your favorite toppings.
Notes
- Paleo / Whole30: Serve in butter lettuce with compliant buffalo sauce and dressing. Omit blue cheese crumbles.
- Texture Tip: The cold chunks of ghee help keep the burgers juicy while grilling.
