Instructions

  1. In a small light-colored pan, melt 8 tablespoons (1 stick) of butter over medium heat.
  2. Continue cooking for about 5 minutes, stirring occasionally, until the butter turns light brown and smells nutty.
  3. Pour the browned butter into a large mixing bowl, including the browned bits from the bottom of the pan.
  4. Melt the remaining 4 tablespoons (½ stick) of butter and add it to the browned butter.
  5. Add brown sugar and beat with an electric mixer or whisk until combined.
  6. Mix in the egg and vanilla extract until fully incorporated.
  7. In a separate bowl, whisk together flour and baking soda.
  8. Add dry ingredients to wet ingredients and mix until just barely combined.
  9. Gently fold in chopped pecans until evenly distributed.
  10. Refrigerate the dough for 30 minutes.
  11. Preheat oven to 375°F (190°C) while dough chills.
  12. Scoop 1½–2 tablespoon portions onto a parchment-lined baking sheet, spacing 2 inches apart.
  13. Slightly press down each dough ball to about ½-inch thickness.
  14. Bake for 12–14 minutes.
  15. Let cookies cool on the baking sheet for 10 minutes before transferring.
