Description
Tender sirloin steak bites cooked in butter and served with garlic herb potatoes.
Ingredients

- 4 tablespoons butter, divided
- 1 tablespoon olive oil
- 1 pound Yukon Gold or red potatoes, cut into ½-inch chunks
- 4 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1½ pounds sirloin steak, cut into 1-inch chunks
Instructions
- Heat a cast iron or nonstick skillet over medium-high heat.
- Add 2 tablespoons butter and olive oil. Heat until butter is melted.
- Add potatoes, garlic, oregano, rosemary, salt, and pepper.
- Cook for 4–5 minutes, stirring occasionally.
- Stir and cook another 4–5 minutes until potatoes are fork-tender.
- Remove potatoes from the skillet and set aside.
- Return skillet to stove and increase heat to high.
- Add remaining 2 tablespoons butter.
- Add steak bites in a single layer. Cook for 1 minute without turning to sear.
- Stir and cook another 1–2 minutes until desired doneness.
- Remove from heat and return potatoes to the skillet. Toss to combine.
- Garnish with fresh chopped parsley if desired.
Notes
- Substitute cuts like filet mignon, ribeye, New York strip, T-bone, or stir-fry beef.
- Yukon Gold or red potatoes work best (Russets may become watery).
- If potatoes brown too quickly and aren’t tender, lower heat to medium-low, add 2 tablespoons warm water, cover, and cook 3–4 more minutes.
- For extra flavor, finish with a squeeze of lemon juice.
