Ingredients

  • 2 tablespoons olive oil
  • 8 cups cabbage, cut into 1-inch pieces (about 1 small cabbage)
  • 2 teaspoons salt, divided
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz diced tomatoes (1 can)
  • 8 oz tomato sauce (1 can)
  • 2 teaspoons Italian seasoning
  • 1 teaspoon black pepper
  • 2 cups cooked white rice
  • 1 cup shredded cheddar cheese (or mozzarella, pepper jack, colby jack, etc.)

Instructions

  1. Cook 1 cup dry white rice according to package directions (makes about 2 cups cooked).
  2. Preheat oven to 350°F. Lightly grease a 9×13-inch casserole dish.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add cabbage and 1 teaspoon salt. Sauté for about 8 minutes, stirring occasionally, until just tender. Transfer to a bowl.
  5. In the same skillet, cook ground beef over medium-high heat for about 5 minutes, breaking it apart as it browns.
  6. Add diced onion and garlic. Cook 4–5 minutes until onion is soft.
  7. Stir in diced tomatoes, tomato sauce, Italian seasoning, black pepper, and remaining salt.
  8. Remove from heat. Stir in cooked rice and sautéed cabbage until well combined.
  9. Transfer mixture to prepared baking dish. Top with shredded cheese.
  10. Bake for 20–25 minutes, until cheese is melted and bubbly.
  11. Garnish with sliced green onions or chopped parsley if desired.

Notes

  • Use green cabbage and remove the core before chopping.
  • Add diced red bell peppers for extra flavor and color.
  • A pinch of crushed red pepper flakes can be added for heat.
  • Brown rice may be used but requires longer cooking time.
  • Cheese options include mozzarella, colby jack, pepper jack, havarti, or fontina. Freshly shredded cheese melts best.
