- 2 tablespoons olive oil
- 8 cups cabbage, cut into 1-inch pieces (about 1 small cabbage)
- 2 teaspoons salt, divided
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 14.5 oz diced tomatoes (1 can)
- 8 oz tomato sauce (1 can)
- 2 teaspoons Italian seasoning
- 1 teaspoon black pepper
- 2 cups cooked white rice
- 1 cup shredded cheddar cheese (or mozzarella, pepper jack, colby jack, etc.)
Instructions
- Cook 1 cup dry white rice according to package directions (makes about 2 cups cooked).
- Preheat oven to 350°F. Lightly grease a 9×13-inch casserole dish.
- Heat olive oil in a large skillet over medium heat.
- Add cabbage and 1 teaspoon salt. Sauté for about 8 minutes, stirring occasionally, until just tender. Transfer to a bowl.
- In the same skillet, cook ground beef over medium-high heat for about 5 minutes, breaking it apart as it browns.
- Add diced onion and garlic. Cook 4–5 minutes until onion is soft.
- Stir in diced tomatoes, tomato sauce, Italian seasoning, black pepper, and remaining salt.
- Remove from heat. Stir in cooked rice and sautéed cabbage until well combined.
- Transfer mixture to prepared baking dish. Top with shredded cheese.
- Bake for 20–25 minutes, until cheese is melted and bubbly.
- Garnish with sliced green onions or chopped parsley if desired.
Notes
- Use green cabbage and remove the core before chopping.
- Add diced red bell peppers for extra flavor and color.
- A pinch of crushed red pepper flakes can be added for heat.
- Brown rice may be used but requires longer cooking time.
- Cheese options include mozzarella, colby jack, pepper jack, havarti, or fontina. Freshly shredded cheese melts best.
