Description
A deconstructed version of the classic California roll served in a bowl.
Ingredients
Scale
- 1 cup sushi rice (or other short-grain rice)
- 1¼ cups water
- 2 tablespoons rice vinegar
- 1 large avocado, diced
- 8 ounces imitation crab, diced
- 1 cup English cucumber, diced
- ½ cup mayonnaise
- 2 teaspoons sriracha
- Sesame seeds, sliced green onions, and/or nori furikake for garnish
Instructions
- Rinse the rice under cold water for about 30 seconds until the water runs clear.
- Add rice and water to a medium pot and bring to a boil over medium-high heat.
- Cover, reduce heat to low, and simmer for 18–20 minutes until water is absorbed.
- Transfer cooked rice to a large bowl, drizzle with rice vinegar, and stir to combine.
- Allow rice to cool completely.
- In a small bowl, whisk together mayonnaise and sriracha. Add a tablespoon of water if needed to thin the sauce.
- Divide rice evenly between four bowls.
- Top with diced avocado, imitation crab, and cucumber.
- Drizzle spicy mayo over the top.
- Garnish with sesame seeds, green onions, or nori furikake as desired.
Notes
- Rice can also be prepared in a rice cooker following manufacturer instructions.
- Sushi rice is typically found in the Asian aisle of most grocery stores.
- Brown rice or other varieties may be substituted.
- Cauliflower rice can be used for a lower-carb option.
- English or Persian cucumbers are preferred for fewer seeds, though any cucumber works.
