Description

A deconstructed version of the classic California roll served in a bowl.


Ingredients

  • 1 cup sushi rice (or other short-grain rice)
  • 1¼ cups water
  • 2 tablespoons rice vinegar
  • 1 large avocado, diced
  • 8 ounces imitation crab, diced
  • 1 cup English cucumber, diced
  • ½ cup mayonnaise
  • 2 teaspoons sriracha
  • Sesame seeds, sliced green onions, and/or nori furikake for garnish

Instructions

  1. Rinse the rice under cold water for about 30 seconds until the water runs clear.
  2. Add rice and water to a medium pot and bring to a boil over medium-high heat.
  3. Cover, reduce heat to low, and simmer for 18–20 minutes until water is absorbed.
  4. Transfer cooked rice to a large bowl, drizzle with rice vinegar, and stir to combine.
  5. Allow rice to cool completely.
  6. In a small bowl, whisk together mayonnaise and sriracha. Add a tablespoon of water if needed to thin the sauce.
  7. Divide rice evenly between four bowls.
  8. Top with diced avocado, imitation crab, and cucumber.
  9. Drizzle spicy mayo over the top.
  10. Garnish with sesame seeds, green onions, or nori furikake as desired.

Notes

  • Rice can also be prepared in a rice cooker following manufacturer instructions.
  • Sushi rice is typically found in the Asian aisle of most grocery stores.
  • Brown rice or other varieties may be substituted.
  • Cauliflower rice can be used for a lower-carb option.
  • English or Persian cucumbers are preferred for fewer seeds, though any cucumber works.
  • Adjust the amount of sriracha to control the spice level.
