Ingredients

Scale
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 Tablespoon ground cinnamon
  • 1 teaspoon salt
  • 16 oz pecan halves (about 4 cups)
  • 1 large egg white
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon water

Instructions

  1. Preheat oven to 300°F. Line a large baking sheet with parchment paper.

  3. In a separate bowl, combine granulated sugar, brown sugar, cinnamon, and salt.
  4. Add pecans to the egg white mixture and gently toss to coat. Sprinkle in the cinnamon-sugar mixture and stir gently until pecans are evenly coated.
  5. Spread pecans in a single layer on the prepared baking sheet.
  6. Bake for 40–45 minutes, stirring every 15 minutes.
  7. Remove from oven and allow pecans to cool completely on the baking sheet.

Notes

  • Works well with other nuts: walnuts, almonds, cashews, peanuts, or pistachios.
  • Store in an airtight container at room temperature or in the fridge for several weeks.
  • Freeze up to 2 months.
  • Stovetop Version: Toast 1 cup pecans in a pan over medium-high heat for 2–3 minutes. In the same pan, combine 1/2 cup brown sugar, a dash of salt, 1/4 teaspoon cinnamon, and 2 Tablespoons water; cook until bubbling. Return pecans and stir for 3 minutes to coat. Transfer to parchment to cool.
