Sweet and crunchy candied pecans, perfect for snacking or topping salads.
Ingredients

- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 Tablespoon ground cinnamon
- 1 teaspoon salt
- 16 oz pecan halves (about 4 cups)
- 1 large egg white
- 1/2 teaspoon vanilla extract
- 1 teaspoon water
Instructions
- Preheat oven to 300°F. Line a large baking sheet with parchment paper.
- In a mixing bowl, beat the egg white, vanilla, and water until stiff peaks form.
- In a separate bowl, combine granulated sugar, brown sugar, cinnamon, and salt.
- Add pecans to the egg white mixture and gently toss to coat. Sprinkle in the cinnamon-sugar mixture and stir gently until pecans are evenly coated.
- Spread pecans in a single layer on the prepared baking sheet.
- Bake for 40–45 minutes, stirring every 15 minutes.
- Remove from oven and allow pecans to cool completely on the baking sheet.
Notes
- Works well with other nuts: walnuts, almonds, cashews, peanuts, or pistachios.
- Store in an airtight container at room temperature or in the fridge for several weeks.
- Freeze up to 2 months.
- Stovetop Version: Toast 1 cup pecans in a pan over medium-high heat for 2–3 minutes. In the same pan, combine 1/2 cup brown sugar, a dash of salt, 1/4 teaspoon cinnamon, and 2 Tablespoons water; cook until bubbling. Return pecans and stir for 3 minutes to coat. Transfer to parchment to cool.
