  • 1 loaf ciabatta bread, cut horizontally
  • 4 tablespoons salted butter
  • 3 cloves garlic, minced
  • 12 oz fresh mozzarella cheese, sliced
  • 1/2 cup balsamic vinegar
  • 2 medium tomatoes, sliced
  • Salt and freshly ground black pepper, to taste
  • 1/3 cup chopped fresh basil

Instructions

  1. Preheat oven to 400°F. Place both halves of the ciabatta cut-side up on a large baking sheet.
  2. In a small bowl, mix the butter and minced garlic. Spread evenly over both bread halves.
  3. Arrange mozzarella slices over the bread so it is fully covered. Bake for 12–15 minutes, or until the cheese is melted and bubbly.
  4. While the bread bakes, prepare the balsamic reduction: add balsamic vinegar to a small saucepan, bring to a boil, then reduce heat and simmer for 5–7 minutes until reduced by half. Set aside.
  5. Remove bread from the oven. Top with sliced tomatoes. Season with salt and pepper.
  6. Sprinkle with fresh basil and drizzle with the balsamic reduction.
  7. Slice and serve warm.
