Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tomatoes, thinly sliced
  • 8 slices mozzarella cheese (fresh or regular)
  • 1 cup fresh basil leaves (divided)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • ½ cup balsamic vinegar
  • 1 tablespoon brown sugar
  • 4 cloves garlic, minced

Instructions

  1. Preheat oven to 375°F.
  2. Carefully slice each chicken breast about ¾ of the way through on the thickest side to create a pocket (do not cut all the way through).
  3. Stuff each pocket with 2 slices of tomato, 2 slices of mozzarella, and ¼ cup basil leaves.
  4. Secure the open side with toothpicks placed diagonally.
  5. Sprinkle each chicken breast with salt, dried basil, and oregano.
  6. Heat 2 teaspoons olive oil in a non-stick or cast iron pan over medium-high heat.
  7. Sear chicken for 2 minutes per side, flipping carefully.
  8. Transfer chicken to a 9×13-inch casserole dish (or place cast iron pan directly in oven if using).
  9. In a small bowl, mix garlic, balsamic vinegar, and brown sugar.
  10. Pour the mixture over the chicken.
  11. Bake for 15–20 minutes, or until chicken is fully cooked and no longer pink in the center.
  12. Drizzle with extra balsamic sauce before serving.
  13. Remove toothpicks prior to serving.

Notes

  • Can be cooked in a non-stick or cast iron pan.
  • If using cast iron, it can go directly from stovetop to oven.
  • Fresh mozzarella or regular sliced mozzarella both work well.
