- 4 boneless, skinless chicken breasts
- 2 tomatoes, thinly sliced
- 8 slices mozzarella cheese (fresh or regular)
- 1 cup fresh basil leaves (divided)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 2 tablespoons olive oil
- ½ cup balsamic vinegar
- 1 tablespoon brown sugar
- 4 cloves garlic, minced
Instructions
- Preheat oven to 375°F.
- Carefully slice each chicken breast about ¾ of the way through on the thickest side to create a pocket (do not cut all the way through).
- Stuff each pocket with 2 slices of tomato, 2 slices of mozzarella, and ¼ cup basil leaves.
- Secure the open side with toothpicks placed diagonally.
- Sprinkle each chicken breast with salt, dried basil, and oregano.
- Heat 2 teaspoons olive oil in a non-stick or cast iron pan over medium-high heat.
- Sear chicken for 2 minutes per side, flipping carefully.
- Transfer chicken to a 9×13-inch casserole dish (or place cast iron pan directly in oven if using).
- In a small bowl, mix garlic, balsamic vinegar, and brown sugar.
- Pour the mixture over the chicken.
- Bake for 15–20 minutes, or until chicken is fully cooked and no longer pink in the center.
- Drizzle with extra balsamic sauce before serving.
- Remove toothpicks prior to serving.
Notes
- Can be cooked in a non-stick or cast iron pan.
- If using cast iron, it can go directly from stovetop to oven.
- Fresh mozzarella or regular sliced mozzarella both work well.
