A refreshing salad with a crunchy texture and a flavorful sesame dressing.
Ingredients

- ½ head green cabbage, finely shredded
- ½ head purple cabbage, finely shredded
- 2 cups carrots, matchstick-cut or shredded
- 1 cup fresh cilantro, chopped
- ½ cup green onions, sliced
- 2 cups cooked edamame
- 1–2 cups roasted cashews
- 2 cups crunchy chow mein noodles (optional)
- Optional protein: grilled chicken, shrimp, tofu, or your choice
- ¼ cup olive oil (or another neutral oil)
- 3 tablespoons white vinegar
- 2 tablespoons sesame oil
- 2 tablespoons sugar
- 1 teaspoon salt
- A few shakes garlic powder
- Optional: ¼ cup Greek yogurt or mayonnaise
Instructions
- Add all dressing ingredients to a jar. Shake well until smooth and emulsified. If using Greek yogurt or mayo, add it and shake again until creamy. Taste and adjust as needed.
- In a large bowl, combine green cabbage, purple cabbage, carrots, cilantro, green onions, edamame, cashews, chow mein noodles (if using), and protein of choice (if adding).
- Drizzle with dressing and toss until evenly coated. Serve immediately for maximum crunch.
Notes
- Regular roasted cashews are great, but Thai chili–style cashews add an amazing kick.
- Skip the Greek yogurt or mayo for a vegan option.
- Try adding white miso instead of yogurt or mayo for a creamy dairy-free option.
- Omit the chow mein noodles for a gluten-free version.
- Keep salad and dressing separate until serving to maintain crunch.
