Description

This Cherry Amaretto Tiramisu combines rich mascarpone and cherries for a delightful dessert.


Ingredients

  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup cherry juice (plus extra for dipping)
  • 1 cup fresh cherries, pitted and chopped
  • 1/4 cup granulated sugar
  • 2 tablespoons cherry preserves
  • 1 teaspoon vanilla extract
  • 1 package ladyfingers
  • 1/4 cup cocoa powder
  • 1/4 cup dark chocolate, shaved or grated

Instructions

  1. In a large mixing bowl, combine mascarpone cheese and heavy cream.
  2. Using a hand mixer or stand mixer, beat on medium speed until smooth and fluffy, about 2–3 minutes.
  3. Add 1/2 cup cherry juice and vanilla extract. Beat again until well combined.
  4. In a small bowl, mix granulated sugar and cherry preserves.
  5. Add the sugar mixture to the mascarpone mixture and beat for 1 minute.
  6. Gently fold in the chopped fresh cherries until evenly distributed.
  7. Pour additional cherry juice into a shallow dish for dipping.
  8. Quickly dip each ladyfinger into the cherry juice, being careful not to soak too long.
  9. Arrange a layer of dipped ladyfingers in the bottom of a 9×13-inch baking dish.
  10. Spread half of the mascarpone cherry mixture evenly over the ladyfingers.
  11. Add another layer of dipped ladyfingers.
  12. Spread the remaining mascarpone mixture evenly on top.
  13. Cover and refrigerate for at least 4 hours, preferably overnight, to set.
  14. Before serving, dust with cocoa powder and sprinkle with shaved dark chocolate.
  15. Serve chilled.

Notes

  • For a lighter texture, substitute heavy cream with whipped cream.
  • Do not over-soak the ladyfingers to prevent sogginess.
  • Fresh, ripe cherries provide the best flavor, but frozen cherries can be used if needed.
  • For deeper cherry flavor, add a small amount of extra cherry juice to the soaking liquid.
  • Use high-quality dark chocolate (70% cocoa or higher) for a richer taste.
