Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream softened butter and brown sugar until light and fluffy (about 2–3 minutes).
  4. Beat in egg and vanilla until fully combined.
  5. Gradually mix in milk until smooth.
  6. Add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
  7. Stir in rolled oats.
  8. Fold in white chocolate chips evenly.
  9. Scoop rounded tablespoons of dough onto prepared baking sheet, spacing about 2 inches apart.
  10. Gently flatten each dough ball slightly (these cookies don’t spread much).
  11. Bake for 10–12 minutes, until edges are golden and centers are set.
  12. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  13. Store in an airtight container at room temperature for up to 1 week.

  • For extra chewiness, substitute quick oats for rolled oats.
  • Add 1/4 teaspoon ground ginger or allspice for deeper spice flavor.
