Chewy French Toast Cookies are soft, flavorful cookies that combine the taste of French toast with a cookie format.

- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 2 cups old-fashioned rolled oats
- 1/2 cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
- In a large bowl, cream softened butter and brown sugar until light and fluffy (about 2–3 minutes).
- Beat in egg and vanilla until fully combined.
- Gradually mix in milk until smooth.
- Add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
- Stir in rolled oats.
- Fold in white chocolate chips evenly.
- Scoop rounded tablespoons of dough onto prepared baking sheet, spacing about 2 inches apart.
- Gently flatten each dough ball slightly (these cookies don’t spread much).
- Bake for 10–12 minutes, until edges are golden and centers are set.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Store in an airtight container at room temperature for up to 1 week.
Notes
- For extra chewiness, substitute quick oats for rolled oats.
- Add 1/4 teaspoon ground ginger or allspice for deeper spice flavor.
- Mix in chopped pecans or dried cranberries for texture contrast.
- Cookies will look slightly soft when removed — they firm up as they cool.
