Ingredients

  • 1 lb ground chicken
  • ¼ cup white onion, shredded
  • 23 tablespoons frozen butter, shredded
  • 2 tablespoons mayonnaise
  • 2 tablespoons parmesan cheese, finely shredded
  • 2 teaspoons garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ½ teaspoon lemon zest
  • ½ teaspoon liquid smoke (optional)
  • Kosher salt & ground black pepper
  • Hamburger buns (regular or gluten-free)
  • Romaine lettuce
  • Caesar dressing (regular or dairy-free)
  • Shaved parmesan cheese
  • Croutons
  • Optional: sliced red onion

Instructions

  1. Prep the Onion & Butter: Grate the white onion onto paper towels and squeeze out excess moisture. Shred frozen butter using the same grater.
  2. Make the Burger Mixture: In a large bowl, combine ground chicken, grated onion, grated butter, mayo, parmesan, garlic, Worcestershire, Dijon, lemon zest, and liquid smoke (if using). Mix gently until just combined.
  3. Form Patties: Line a small baking sheet with parchment paper. Divide mixture into 4 equal patties. Press a small indent into the center of each patty. Freeze for 20 minutes.
  4. Grill: Preheat grill to medium-high heat. Clean grates and lightly oil if needed. Season tops of patties with salt and pepper. Grill for 5–6 minutes per side until internal temperature reaches 160°F. Add cheese during the last 1–2 minutes if desired. Let rest for 5 minutes.
  5. Build the Burgers: Layer bottom bun, romaine lettuce, Caesar dressing, chicken burger, more Caesar dressing, red onion (optional), shaved parmesan, croutons, and top bun. Serve immediately.
