Ingredients

  • 4 ounces cream cheese (softened)
  • 1 cup freshly grated parmesan cheese
  • 8 ounces uncooked fettuccine
  • 2 large boneless skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste
  • Flour for dredging
  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)
  • 1 cup heavy/whipping cream
  • 1/4 cup chicken broth
  • 2 large cloves garlic (minced)

Instructions

  1. Take cream cheese out of the fridge to soften for at least 30 minutes or microwave for 20-30 seconds.
  2. Grate parmesan cheese and prepare other ingredients.
  3. Boil a large, salted pot of water and cook fettuccine al dente according to package directions.
  4. Cut chicken breasts in half lengthwise to create 4 thinner cutlets. Season with garlic powder, salt, and pepper. Coat in flour.
  5. In a skillet over medium-high heat, add olive oil and 1 tablespoon butter. Cook chicken for 5 minutes per side until golden and cooked through. Remove chicken and set aside.
  6. Wipe out the skillet if needed. Add remaining 2 tablespoons butter, cream cheese, cream, chicken broth, and garlic. Heat over medium, stirring until cream cheese melts.
  7. Let sauce bubble for 5 minutes until reduced, stirring occasionally. Slice chicken into bite-size strips.
  8. Stir parmesan into the sauce and cook for another minute. Adjust thickness with hot pasta water if needed. Season with salt and pepper.
  9. Drain fettuccine and add to the skillet, tossing with sauce. Serve with chicken on top and additional parmesan if desired.

Notes

  • Do not substitute heavy cream, as it may cause the sauce to separate.
