A delicious and healthy chicken meatloaf recipe, perfect for family dinners.
Ingredients

- 2 pounds ground chicken (or ground turkey)
- 1 cup Parmesan cheese, shredded (or Romano)
- 1 cup Panko breadcrumbs (or regular breadcrumbs)
- 2 large eggs
- 4 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried basil
- 1 tsp dried parsley
- 1 tsp salt
- ½ tsp black pepper
- ½ cup whole milk (or plant-based milk)
- 2 tbsp unsalted butter (for glaze)
- ¼ cup additional Parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan.
- In a large bowl, combine ground chicken, Parmesan, breadcrumbs, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, pepper, and milk. Stir gently until just combined.
- Shape the mixture into a loaf and place it on the prepared baking sheet or in the loaf pan. Bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).
- While the meatloaf bakes, melt butter in a saucepan over medium heat. Add minced garlic and sauté until fragrant. Stir in Parmesan and parsley, cooking until slightly thickened.
- Brush the glaze over the cooked meatloaf and return to the oven for 5–7 minutes.
- Let rest for 5 minutes, then slice and garnish with extra parsley.
Notes
- Sprinkle extra Parmesan on top for added flavor.
- Great for meal prep and can be made ahead of time.
