Instructions

  1. Make the Cake: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt. In another bowl, whisk oil, buttermilk, eggs, and vanilla. Gradually combine wet and dry ingredients. Slowly stir in boiling water (batter will be thin). Divide between pans and bake 25–30 minutes, until a toothpick comes out clean. Cool 10 minutes in pans, then transfer to a wire rack to cool completely.
  2. Prepare the Chocolate Mousse: Heat 1/2 cup heavy cream until steaming (not boiling). Pour over chopped chocolate; let sit 5 minutes. Whisk until smooth. In a separate bowl, whip remaining 1 1/2 cups cream with sugar and vanilla to soft peaks. Gently fold chocolate mixture into whipped cream. Refrigerate at least 1 hour, until set but spreadable.
  3. Make the Ganache: Heat cream until just simmering. Pour over chopped chocolate; let sit 5 minutes. Stir until smooth and glossy. Cool slightly before using.
  4. Assemble the Cake: Place one cake layer on a serving plate. Spread a thick layer of mousse on top. Add second cake layer. Cover top and sides with remaining mousse. Pour ganache over cake, letting it drip down the sides. Smooth top if needed. Chill at least 2 hours before slicing.
