Chocolate Turtles are a delightful combination of buttery caramel, crunchy pecans, and smooth chocolate, perfect for sweet cravings.

- 6 tablespoons salted butter
- ½ cup light brown sugar, packed
- ½ cup granulated sugar
- ½ cup sweetened condensed milk
- ½ cup light corn syrup
- ½ teaspoon vanilla extract
- 2 cups pecan halves, toasted and chopped
- 16 oz almond bark or high-quality chocolate
Instructions
- Preheat oven to 350°F. Spread pecans on a baking sheet and toast for 5–10 minutes until fragrant, stirring once. Cool and roughly chop.
- Line a baking sheet with parchment paper or a silicone liner.
- Melt butter in a large microwave-safe bowl. Stir in brown sugar, granulated sugar, sweetened condensed milk, and corn syrup. Microwave on HIGH for 6–8 minutes, until the mixture reaches about 235°F or passes the soft-ball test in ice water.
- Carefully remove from microwave. Stir in vanilla, then fold in chopped pecans.
- Drop spoonfuls of the caramel pecan mixture onto the prepared baking sheet. Refrigerate for about 20 minutes until set.
- Melt almond bark or chocolate in the microwave in 30-second intervals, stirring until smooth.
- Drop each caramel pecan mound into the melted chocolate, coat fully, lift with a fork, tap off excess chocolate, and place back on parchment to set.
- Keep in an airtight container at room temperature or refrigerated for up to 3 weeks.
Notes
- Microwave times may vary depending on wattage; check caramel consistency carefully.
- Almond bark sets well at room temperature, but quality chocolate can also be used.
- To freeze, place clusters on a tray for 1 hour, then transfer to a freezer bag for up to 3 months.
