Description
Cinnamon-Sugar Air Fryer Banana Chips are a sweet and crispy snack made with ripe bananas and a touch of cinnamon sugar.
Ingredients

- 2 cups pecans
- 2 cups sweetened shredded coconut
- 1 ½ cups granulated sugar
- 1 cup brown sugar
- ½ cup evaporated milk
- ½ cup light corn syrup
- ½ cup (1 stick) unsalted butter
- 1 teaspoon vanilla extract
- ½ teaspoon salt
Instructions
- In a large saucepan, combine granulated sugar, brown sugar, evaporated milk, corn syrup, and butter. Heat over medium-high, stirring continuously until fully combined and smooth.
- Bring the mixture to a rolling boil and let it boil for 3 minutes, stirring frequently. Remove from heat immediately after boiling.
- Stir in vanilla extract and salt until fully incorporated.
- Gradually stir in shredded coconut and pecans. Continue stirring for 3–4 minutes as the mixture begins to cool and slightly thicken.
- Using a tablespoon or small scoop, drop portions onto baking sheets lined with wax paper.
- Allow cookies to firm up at room temperature. For faster setting, place in the refrigerator or freezer until solid.
Notes
- Lightly toast the pecans beforehand for enhanced flavor.
- If the mixture seems too soft, allow it to cool slightly longer before scooping.
- Store in an airtight container in the refrigerator for up to one week.
- These cookies also freeze well for longer storage.
