Instructions

  1. Make the Blueberry Layer: Place blueberries and maple syrup in a small saucepan. Cook over medium heat for 1 minute until blueberries begin to soften and release their juices. Mash lightly if desired and let cool. Store in the fridge until ready to use.
  2. Prepare the Overnight Oats: In a bowl, combine oats, chia seeds, water or milk, maple syrup, Greek yogurt, vanilla extract, and salt. Stir until well combined. Cover and refrigerate for at least 3 hours, preferably overnight.
