- Blueberry Layer:
- 2 cups blueberries (fresh or frozen)
- 2 tablespoons maple syrup
- Overnight Oats:
- 2 cups old-fashioned rolled oats
- 4 tablespoons chia seeds
- 3 cups water or milk
- 4 tablespoons maple syrup
- 1 cup Greek yogurt (vanilla or blueberry)
- 2–3 teaspoons vanilla extract
- 1 pinch salt
Instructions
- Make the Blueberry Layer: Place blueberries and maple syrup in a small saucepan. Cook over medium heat for 1 minute until blueberries begin to soften and release their juices. Mash lightly if desired and let cool. Store in the fridge until ready to use.
- Prepare the Overnight Oats: In a bowl, combine oats, chia seeds, water or milk, maple syrup, Greek yogurt, vanilla extract, and salt. Stir until well combined. Cover and refrigerate for at least 3 hours, preferably overnight.
- Assemble and Serve: In a jar or glass, add a layer of blueberry mixture. Top with the overnight oats. Add extra toppings if desired: fresh blueberries, nuts, or granola.
