Ingredients

- 1 ¾ cups all-purpose flour
- 1 ¼ cups yellow cornmeal
- 1 tbsp baking powder
- 1 tsp granulated sugar
- 1 tsp salt
- 2 cups milk
- 3 tbsp oil (vegetable or canola oil)
- 2 large eggs
- Your favorite chili
- Optional toppings: shredded cheese, sour cream, chopped green onion
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, combine flour, cornmeal, baking powder, sugar, and salt.
- Stir in milk, oil, and eggs until smooth. Be careful not to over-mix.
- Spray the waffle iron with non-stick cooking spray. Pour batter onto the hot waffle iron and cook in batches until golden and cooked through.
- Top waffles with chili. Optional: add shredded cheese, sour cream, and chopped green onions for extra flavor.
Notes
- Make sure not to over-mix the batter for fluffy waffles.
