Instructions

  1. In a large mixing bowl, combine cottage cheese, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a small bowl, whisk together lemon juice, olive oil, salt, pepper, and cumin until smooth.
  3. Pour the dressing over the salad and toss gently to coat all ingredients evenly. Adjust seasoning with extra salt or pepper if needed.
  4. Optionally, line a platter or plates with lettuce leaves. Spoon the salad onto the leaves or serve directly in bowls. Garnish with extra parsley if desired.
