Ingredients

Scale
  • 16 cipollini onions
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon black pepper
  • Peanut or vegetable oil, for frying

Instructions

  1. Fill a tall pot with about 2 1/2 inches of oil.
  2. Preheat oil to 350˚F (175°C).
  3. Cut off 1/8 inch from the pointed stem end of each onion.
  4. Carefully peel without removing an actual onion layer.
  5. Place onion cut-side up and make a cross-cut, leaving the bottom stem intact.
  6. Continue making cross-cuts until you have about 12 evenly spaced cuts.
  7. Turn onions over and gently separate outer layers with your fingers.
  8. Pour buttermilk into a small bowl.
  9. In another bowl, mix flour, garlic powder, onion powder, smoked paprika, salt, dry mustard, and black pepper.
  10. Dip each onion into buttermilk and shake off excess.
  11. Dredge in flour mixture.
  12. Repeat the dipping and dredging for a double coating.
  13. Carefully place a few onions at a time into the hot oil, cut-side down.
  14. Fry for 3–4 minutes.
  15. Flip and fry for another 2 minutes until golden brown and crispy.
  16. Transfer to paper towels to drain.
  17. Season lightly with salt and pepper.
  18. Serve warm with buttermilk ranch dipping sauce.

Notes

  • Maintain oil temperature at 350°F for even cooking.
  • Avoid overcrowding the pot to keep onions crispy.
  • For extra spice, add a pinch of cayenne to the flour mixture.
