These Crumbl pumpkin pie cookies are soft, creamy, and filled with a delightful pumpkin cream filling.

- 1 stick butter, softened
- 1/3 cup vegetable or canola oil
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 egg, room temperature
- 1 tsp vanilla extract
- 2 1/3 cups all-purpose flour
- 1/4 tsp salt
- 3/4 tsp baking powder
- 3 oz cream cheese, softened
- 1/2 cup brown sugar
- 5 oz pumpkin puree
- 2 tsp pumpkin pie spice
- Orange gel food coloring (optional)
- 2/3 cup cold heavy cream
- 1 Tbsp granulated sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Cream butter, oil, granulated sugar, and powdered sugar until smooth.
- Add egg and vanilla; mix well.
- Add flour, salt, and baking powder; mix until combined.
- Scoop 9 equal cookie balls onto the baking sheet. Flatten to about 1 inch thick.
- Use a 1/4 cup measure to press an indent into the center of each cookie.
- Bake for 8–9 minutes. Cool completely on the baking sheet.
- Beat cream cheese and brown sugar until smooth.
- Mix in pumpkin puree, pumpkin pie spice, and food coloring (if using).
- In a separate bowl, whip heavy cream, sugar, and vanilla to stiff peaks.
- Gently fold whipped cream into the pumpkin mixture.
- Transfer filling to a piping bag and pipe a generous dollop into each cookie center.
- Lightly tap cookies on the counter to help filling settle.
- Optionally top with extra whipped cream before serving.
Notes
- Ensure cookies are fully cooled before adding the filling.
- Store in the refrigerator due to the cream filling.
- Best enjoyed within 2–3 days.
