Description

These Crumbl pumpkin pie cookies are soft, creamy, and filled with a delightful pumpkin cream filling.


Ingredients

  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg, room temperature
  • 1 tsp vanilla extract
  • 2 1/3 cups all-purpose flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 3 oz cream cheese, softened
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2 tsp pumpkin pie spice
  • Orange gel food coloring (optional)
  • 2/3 cup cold heavy cream
  • 1 Tbsp granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Cream butter, oil, granulated sugar, and powdered sugar until smooth.
  3. Add egg and vanilla; mix well.
  4. Add flour, salt, and baking powder; mix until combined.
  5. Scoop 9 equal cookie balls onto the baking sheet. Flatten to about 1 inch thick.
  6. Use a 1/4 cup measure to press an indent into the center of each cookie.
  7. Bake for 8–9 minutes. Cool completely on the baking sheet.
  8. Beat cream cheese and brown sugar until smooth.
  9. Mix in pumpkin puree, pumpkin pie spice, and food coloring (if using).
  10. In a separate bowl, whip heavy cream, sugar, and vanilla to stiff peaks.
  11. Gently fold whipped cream into the pumpkin mixture.
  12. Transfer filling to a piping bag and pipe a generous dollop into each cookie center.
  13. Lightly tap cookies on the counter to help filling settle.
  14. Optionally top with extra whipped cream before serving.
