Instructions
- Preheat oven to 325°F (160°C).
- In a bowl, mix crushed chocolate cookies with melted butter until evenly combined.
- Press the mixture firmly into the bottom of a springform pan to form the crust.
- In a large bowl, beat softened cream cheese, sugar, melted dark chocolate, and vanilla extract until smooth and creamy.
- Add eggs one at a time, mixing well after each addition. Avoid overmixing.
- Gently fold in fresh raspberries.
- Pour the batter evenly over the prepared crust.
- Bake for 60 minutes, or until the center is set but slightly jiggly.
- Turn off the oven and allow the cheesecake to cool gradually.
- Cool completely at room temperature, then refrigerate.
