  • ¼ cup cocoa powder (optional, for garnish)
  • Chocolate shavings or curls (optional, for garnish)

Instructions

  1. Bake the Cake: Prepare and bake the chocolate cake according to package directions in a 9×13-inch pan. Cool completely, then carefully slice the cake horizontally into two even layers.
  2. Make Ganache Base: Heat 1 cup heavy cream until just simmering. Pour over chocolate chips, let sit 2–3 minutes, then stir until smooth. Cool to room temperature.
  3. Whip the Cream: Beat the remaining 2 cups heavy cream with powdered sugar and vanilla until stiff peaks form.
  4. Make the Mousse: Gently fold the cooled ganache into the whipped cream until just combined.
  5. Assemble: Place one cake layer on a serving plate. Spread half the mousse on top. Add the second cake layer and spread remaining mousse over the top and sides.
  6. Garnish & Chill: Dust with cocoa powder and decorate with chocolate shavings if desired. Refrigerate for at least 2–4 hours before serving.
