- 1 ½ pounds salmon (King, Sockeye, or Coho)
- ¼ cup fresh parsley, finely chopped
- ¼ cup Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon extra-virgin olive oil
- 3 garlic cloves, finely chopped
- Salt and pepper, to taste
Instructions
- Preheat oven: Set to 375°F (190°C) and line a baking tray with parchment paper.
- Make the mustard-herb sauce: In a small bowl, combine Dijon mustard, parsley, lemon juice, olive oil, garlic, salt, and pepper.
- Prepare the salmon: Place the salmon on the lined tray and generously spread the mustard-herb mixture over the top of the fillet.
- Bake: Cook for 18–20 minutes, depending on the thickness of the salmon, until cooked through.
- Serve: Slice into portions and serve immediately.
Notes
- You can use 4–6 individual salmon fillets instead of one large fillet.
- For Whole30 compliance, choose a Whole30-approved Dijon mustard.
