Ingredients

Scale
  • 50 g boiling water
  • 3 g instant espresso (or instant coffee)
  • 50 g active sourdough starter
  • 325 g warm water (~90°F / 32°C)
  • 55 g brown sugar
  • 470 g bread flour
  • 9 g salt
  • 30 g unsweetened cocoa powder (sifted)
  • 2 g ground cinnamon (optional)
  • 180 g chocolate chunks or chips (optional)

Instructions

  1. Mix boiling water with espresso powder. Set aside to cool slightly.
  2. In a large bowl, combine starter, warm water, espresso mixture, and brown sugar.
  3. In a separate bowl, sift together flour, cocoa powder, cinnamon, and salt.
  4. Add dry ingredients to wet and mix until a sticky dough forms. Rest for 30 minutes.
  5. Perform a stretch and fold. Rest for 30 minutes.
  6. On the second round, add chocolate chunks.
  7. Repeat for a total of 4 rounds, resting 30 minutes between each.
  8. Cover and ferment at ~70°F (21°C) for 12–14 hours.
  9. Turn dough onto counter, gently pre-shape. Rest for 30 minutes.
  10. Shape into a tight round. Place seam-side up into a floured banneton.
  11. Refrigerate for 8–72 hours.
  12. Place dough on parchment, score.
  13. Put into a cold Dutch oven.
  14. Place in cold oven, set to 450°F (230°C). Bake for 50 minutes.
  15. Remove lid and bake 5–10 minutes more until crust is crisp.
  16. Cool on rack for at least 1 hour before slicing.

Notes

  • Espresso/coffee and cinnamon slow fermentation; expect a slightly tighter crumb and longer rise time.
  • Sifting cocoa prevents clumps and streaking.
  • Store covered at room temperature for 2–3 days or freeze slices up to 3 months.
