  • 1 cup buttermilk
  • 3 tablespoons unsalted butter, melted and cooled
  • 3 tablespoons canola or vegetable oil
  • 2 large eggs, lightly beaten
  • 1 cup frozen corn kernels

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease an 8×8-inch baking pan with nonstick cooking spray.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
  3. In a medium bowl, whisk together the buttermilk, melted butter, oil, and eggs.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be slightly lumpy.
  5. Fold in the frozen corn kernels.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25–30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 15 minutes before cutting into squares and serving.
