- 1 cup all-purpose flour
- 1 cup coarse cornmeal
- 1/3 cup granulated sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 3 tablespoons unsalted butter, melted and cooled
- 3 tablespoons canola or vegetable oil
- 2 large eggs, lightly beaten
- 1 cup frozen corn kernels
Instructions
- Preheat oven to 400°F (200°C). Lightly grease an 8×8-inch baking pan with nonstick cooking spray.
- In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
- In a medium bowl, whisk together the buttermilk, melted butter, oil, and eggs.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be slightly lumpy.
- Fold in the frozen corn kernels.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25–30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let cool in the pan for 15 minutes before cutting into squares and serving.
Notes
- Do not overmix the batter to keep the cornbread tender.
- For a richer flavor, serve warm with butter or honey.
- Store leftovers in an airtight container for up to 3 days.
