A simple and comforting chicken pot pie recipe made from scratch.

- 2 cups cooked chicken, shredded
- 1 cup carrots, diced
- 1 cup peas
- 1 cup potatoes, diced
- 1/2 cup onion, chopped
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp thyme
- 2 pie crusts
Instructions
- Preheat oven to 425°F (220°C).
- In a saucepan, melt butter over medium heat.
- Add onions and cook until soft.
- Stir in flour, salt, pepper, and thyme.
- Gradually add chicken broth and milk, stirring until thickened.
- Add chicken, carrots, peas, and potatoes; mix well.
- Pour mixture into a pie crust.
- Cover with the second pie crust and seal edges.
- Cut slits in the top crust for venting.
- Bake for 30-35 minutes until golden brown.
Notes
- You can use rotisserie chicken for convenience.
- Add your favorite vegetables for variation.
- Let it cool for a few minutes before serving.
