Easy Marshmallow Frosting is a light and fluffy topping perfect for cakes and cupcakes.


Ingredients

  • ½ cup white sugar
  • 2 large egg whites
  • ¼ cup marshmallow fluff (such as Jet-Puffed Marshmallow Creme)
  • 1 teaspoon vanilla extract

Instructions

  1. Add water to a small pot and bring to a gentle simmer over medium heat.
  2. In a heatproof glass or metal bowl, combine egg whites and sugar. Place the bowl over the simmering water (do not let the water boil).
  3. Whisk constantly until the sugar fully dissolves and the mixture reaches 160°F on a thermometer (about 5 minutes).
  4. Transfer the mixture to a metal mixing bowl or the bowl of a stand mixer fitted with a whisk attachment.
  5. Beat on medium speed until stiff peaks form (about 5 minutes).
  6. Slowly add the marshmallow fluff, 1–2 teaspoons at a time over 1–2 minutes, while mixing.
  7. Add vanilla extract and continue beating on high speed until stiff peaks form again (about 3 minutes).
  8. For Cupcakes: Pipe frosting using a piping bag and desired tip.
  9. For Cakes: Spread evenly over the top and sides.
  10. Optional garnish: mini marshmallows or chocolate sprinkles.

Notes

  • Make sure no water or condensation gets into the egg whites, or they will not whip properly.
  • The sugar must be completely dissolved before whipping.
  • Add marshmallow fluff slowly to prevent deflating the meringue.
  • Different brands of marshmallow creme may yield slightly different results.
  • The frosting can be made without marshmallow fluff if desired.
