Easy Marshmallow Frosting is a light and fluffy topping perfect for cakes and cupcakes.
Ingredients

- ½ cup white sugar
- 2 large egg whites
- ¼ cup marshmallow fluff (such as Jet-Puffed Marshmallow Creme)
- 1 teaspoon vanilla extract
Instructions
- Add water to a small pot and bring to a gentle simmer over medium heat.
- In a heatproof glass or metal bowl, combine egg whites and sugar. Place the bowl over the simmering water (do not let the water boil).
- Whisk constantly until the sugar fully dissolves and the mixture reaches 160°F on a thermometer (about 5 minutes).
- Transfer the mixture to a metal mixing bowl or the bowl of a stand mixer fitted with a whisk attachment.
- Beat on medium speed until stiff peaks form (about 5 minutes).
- Slowly add the marshmallow fluff, 1–2 teaspoons at a time over 1–2 minutes, while mixing.
- Add vanilla extract and continue beating on high speed until stiff peaks form again (about 3 minutes).
- For Cupcakes: Pipe frosting using a piping bag and desired tip.
- For Cakes: Spread evenly over the top and sides.
- Optional garnish: mini marshmallows or chocolate sprinkles.
Notes
- Make sure no water or condensation gets into the egg whites, or they will not whip properly.
- The sugar must be completely dissolved before whipping.
- Add marshmallow fluff slowly to prevent deflating the meringue.
- Different brands of marshmallow creme may yield slightly different results.
- The frosting can be made without marshmallow fluff if desired.
