This easy red enchilada sauce recipe takes just 15 minutes to prepare and is perfect for your favorite Mexican dishes.

- 3 tablespoons olive oil
- 3 tablespoons all-purpose flour (or gluten-free flour)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 2 cups chicken or vegetable broth
- 2 tablespoons tomato paste
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 3/4 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- In a small bowl, whisk together flour, chili powder, cumin, garlic powder, oregano, salt, and black pepper.
- Heat olive oil in a medium saucepan over medium heat.
- Add the flour and spice mixture to the hot oil.
- Cook for 1–2 minutes, stirring constantly, until fragrant.
- Stir in tomato paste.
- Gradually whisk in the broth, ensuring no lumps form.
- Bring to a gentle simmer and cook for 5–7 minutes until slightly thickened.
- Stir in apple cider vinegar.
- Remove from heat and use as desired.
Notes
- Adjust chili powder for more or less heat.
- If sauce thickens too much, add a splash of broth to thin.
- Store in an airtight container in the refrigerator for up to 5 days.
