Ingredients

  • 280 g (2 cups) all-purpose flour
  • 8 g (2 tsp) baking powder
  • 3 g (½ tsp) baking soda
  • 4 g (1 tsp) sugar
  • 5 g (¾ tsp) salt
  • 113 g (½ cup) unsalted butter, frozen
  • 113 g (1 cup) cheddar cheese, shredded
  • 23 tbsp fresh herbs (thyme, chives, parsley)
  • 3 g (½ tsp) garlic powder
  • 200 g (⅔ cup) cold sourdough discard
  • 120 g (½ cup) cold half & half (light cream)
  • 28 g (2 tbsp) butter, melted (for brushing)

Instructions

  1. In a large bowl, whisk flour, baking powder, baking soda, sugar, and salt.
  2. Grate the frozen butter into the flour. Toss until butter pieces are pea-sized and coated. Mix in cheddar, herbs, and garlic powder.
  3. Whisk cold sourdough discard and half & half. Pour into a well in the dry mixture. Stir gently until a shaggy dough forms. If too dry, add extra half & half 1 tbsp at a time.
  4. Turn onto a floured surface. Gently press into a rectangle.
  5. Roll into a 9×11-inch rectangle. Fold in half lengthwise, then in half again. Repeat rolling and folding once more.
  6. Roll dough to ½-inch thickness. Cut straight down with a floured biscuit cutter (no twisting). Reroll scraps to make 8–9 biscuits.
  7. Place biscuits ½ inch apart on a parchment-lined tray. Freeze for 20 minutes while oven preheats to 425°F (220°C).
  8. Bake 17–20 minutes until golden. Tent with foil if browning too quickly.
  9. Brush tops with melted butter and serve warm.

  • Cutting straight down helps biscuits rise tall and flaky.
  • Freezing before baking ensures better layers from steam release.
  • Store at room temp 1–2 days, or freeze up to 2 months.
