- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 large onion, sliced
- 1 large bell pepper, sliced (any color)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 packet fajita seasoning mix
- 1 cup sour cream
- 1/2 cup chicken broth
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium-high heat.
- Add chicken pieces and cook until browned on all sides, about 5–7 minutes.
- Add sliced onion and bell pepper to the skillet and cook for an additional 4–5 minutes until tender.
- Sprinkle fajita seasoning over the chicken and vegetables, stirring to coat evenly.
- In a small bowl, mix sour cream and chicken broth until smooth. Pour over chicken and vegetables, stirring to combine.
- Transfer mixture to a baking dish and top with shredded cheddar and mozzarella cheese.
- Bake for 20–25 minutes until cheese is melted and bubbly.
- Garnish with fresh cilantro if desired and serve hot with rice, tortillas, or a side salad.
Notes
- You can substitute half-and-half or cream for a richer sauce.
- Adjust fajita seasoning for milder or spicier flavor.
- Leftovers reheat well in the oven or microwave.
