  • 1 cup shredded mozzarella cheese
  • 1 packet fajita seasoning mix
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add chicken pieces and cook until browned on all sides, about 5–7 minutes.
  4. Add sliced onion and bell pepper to the skillet and cook for an additional 4–5 minutes until tender.
  5. Sprinkle fajita seasoning over the chicken and vegetables, stirring to coat evenly.
  6. In a small bowl, mix sour cream and chicken broth until smooth. Pour over chicken and vegetables, stirring to combine.
  7. Transfer mixture to a baking dish and top with shredded cheddar and mozzarella cheese.
  8. Bake for 20–25 minutes until cheese is melted and bubbly.
  9. Garnish with fresh cilantro if desired and serve hot with rice, tortillas, or a side salad.
