Ingredients

  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • 1 large yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 4 cups beef stock
  • 1 bay leaf
  • 3 sprigs fresh thyme
  • 1 lb cremini mushrooms, halved
  • 12 pearl onions, peeled
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a large Dutch oven over medium heat.
  3. Season the beef with salt and pepper. Brown the beef in batches until well seared. Remove and set aside.
  4. Add yellow onion, carrots, and garlic to the pot. Sauté until softened.
  5. Stir in tomato paste and flour. Cook for 2 minutes.
  6. Add beef stock, bay leaf, and thyme. Bring to a simmer.
  7. Return beef to the pot and add mushrooms and pearl onions.
  8. Cover and transfer to the oven. Cook for 2.5 to 3 hours until beef is tender.
