Garlic Butter Steak Bites are tender, flavorful pieces of ribeye steak cooked in a rich garlic butter sauce.
Ingredients

- 1 pound ribeye steak, cut into 1-inch pieces
- Kosher salt, to taste
- Ground black pepper, to taste
- 2 teaspoons extra virgin olive oil
- 2–3 tablespoons butter (or ghee / plant-based butter)
- 2–3 teaspoons garlic, minced
- Fresh parsley, roughly chopped (for garnish)
Instructions
- Prep the Steak: Cut ribeye into 1-inch pieces. Pat dry thoroughly with paper towels. Season generously with salt and black pepper.
- Sear the Steak: Heat a large cast iron skillet over medium-high heat. Add olive oil and swirl to coat the pan. Once oil is hot, add steak pieces in a single layer. Sear each side for 30–60 seconds. Remove steak to a plate.
- Finish with Garlic Butter: Reduce heat slightly to medium. Add butter and garlic to the skillet. Let butter melt and garlic become fragrant. Return steak bites to the pan. Toss continuously in garlic butter until they reach desired doneness.
- Serve: Sprinkle with fresh parsley and serve immediately.
Notes
- Best Cut: Ribeye gives the most flavor and tenderness, but New York strip works well too.
- Paleo / Whole30: Use ghee instead of butter.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
