This garlic confit recipe transforms garlic into a rich, flavorful ingredient that enhances many dishes.

- 1 cup rendered chicken fat or extra virgin olive oil
- 2 heads garlic, peeled
- 2 teaspoons kosher salt
- 2–4 sprigs fresh thyme
Instructions
- Place the chicken fat or olive oil in a small saucepan.
- Add the whole garlic cloves, salt, and thyme.
- Simmer covered for about 1 hour, or until garlic turns golden brown.
- Adjust salt to taste.
- Use immediately or store in the fridge for later use in recipes like garlic hummus.
Notes
- Oven Method: Place all ingredients in an oven-proof pan and bake at 250°F for 2–2.5 hours.
- Storage: Store in an airtight container in the fridge for up to 3 weeks.
- Herbs: Fresh thyme is recommended, but rosemary, bay leaf, star anise, or black peppercorns can also be used.
- Leftover Oil/Fat: Use garlic and/or oil for cooking other dishes. For easy use, pour into ice cube trays to pre-portion servings.
