Instructions

  1. Place the chicken fat or olive oil in a small saucepan.
  2. Add the whole garlic cloves, salt, and thyme.
  3. Simmer covered for about 1 hour, or until garlic turns golden brown.
  4. Adjust salt to taste.
  5. Use immediately or store in the fridge for later use in recipes like garlic hummus.

Notes

  • Oven Method: Place all ingredients in an oven-proof pan and bake at 250°F for 2–2.5 hours.
  • Storage: Store in an airtight container in the fridge for up to 3 weeks.
  • Herbs: Fresh thyme is recommended, but rosemary, bay leaf, star anise, or black peppercorns can also be used.
