Gingerbread Cake is a rich, spiced dessert perfect for the holidays.

- 1/2 cup granulated sugar
- 1/2 cup butter
- 1 large egg, beaten
- 1 cup unsulphured molasses
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 cup very hot water
- Bananas, for topping
- Fresh whipped cream, for topping
- 1 cup granulated sugar (for vanilla cream sauce)
- 1/2 cup butter (for vanilla cream sauce)
- 1 cup heavy whipping cream (for vanilla cream sauce)
- 2 teaspoons vanilla extract (for vanilla cream sauce)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch pan.
- In a large bowl, cream sugar and butter until light and smooth.
- Add beaten egg and molasses; mix well.
- In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
- Add dry ingredients to wet mixture and stir to combine.
- Slowly pour in hot water and stir until batter is smooth (it will be thin).
- Pour batter into prepared pan and bake for 20–35 minutes, or until a toothpick inserted in the center comes out clean.
- Serve warm topped with sliced bananas, whipped cream, and vanilla cream sauce.
- For vanilla cream sauce, in a saucepan over medium heat, combine sugar, butter, and cream.
- Stir occasionally until butter melts.
- Bring to a boil and cook for 3–5 minutes, stirring frequently.
- Remove from heat and stir in vanilla.
- Let cool slightly before pouring over cake.
Notes
- Sauce can be made a few days ahead and stored in the refrigerator.
- Cake keeps at room temperature for 2 days or refrigerated for up to a week.
- Freeze cake (well wrapped) for up to 2 months. Thaw overnight and warm slightly before serving.
