Description

Gingerbread Cake is a rich, spiced dessert perfect for the holidays.


Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup butter
  • 1 large egg, beaten
  • 1 cup unsulphured molasses
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup very hot water
  • Bananas, for topping
  • Fresh whipped cream, for topping
  • 1 cup granulated sugar (for vanilla cream sauce)
  • 1/2 cup butter (for vanilla cream sauce)
  • 1 cup heavy whipping cream (for vanilla cream sauce)
  • 2 teaspoons vanilla extract (for vanilla cream sauce)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan.
  2. In a large bowl, cream sugar and butter until light and smooth.
  3. Add beaten egg and molasses; mix well.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
  5. Add dry ingredients to wet mixture and stir to combine.
  6. Slowly pour in hot water and stir until batter is smooth (it will be thin).
  7. Pour batter into prepared pan and bake for 20–35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Serve warm topped with sliced bananas, whipped cream, and vanilla cream sauce.
  9. For vanilla cream sauce, in a saucepan over medium heat, combine sugar, butter, and cream.
  10. Stir occasionally until butter melts.
  11. Bring to a boil and cook for 3–5 minutes, stirring frequently.
  12. Remove from heat and stir in vanilla.
  13. Let cool slightly before pouring over cake.

Notes

  • Sauce can be made a few days ahead and stored in the refrigerator.
  • Cake keeps at room temperature for 2 days or refrigerated for up to a week.
  • Freeze cake (well wrapped) for up to 2 months. Thaw overnight and warm slightly before serving.
